Air fried Vegetable Gold Coins

Vegetable gold coin is a simple Indian fusion snack recipe. It is a round bread piece with a spiced potato mixed vegetable topping coated in sesame seeds. This recipe is inspired by my sister, she would make it all he time growing uo and I loved it. So I asked her for the basics and figured a way to airfry it. This is an ideal recipe for parties or get togethers. It is a great snack or appetiser and works as a delicious side with chai as well. Loved by kids and adults this recipe is a must try. Myfavorite way to serve this recipe is with Maggi/Swad chilli ketchup. Even coriander chutney or regular ketchup would work great!

Ingredients: 

Filling:

  • 4-5 boiled golden potatoes, peeled and mashed

  • 1 tbsp olive oil

  • 1 cup onions finely chopped

  • 2 green chilis finely chopped

  • 1/2-2/3 cup green bell peppers finely chopped

  • 2 medium tomatoes finely chopped

  • 3 scallions finely chopped

  • 1 tbsp garlic paste 

  • 1-2 tsp Salt as per taste

  • 1/4 tsp pepper

  • 1 tsp Red chili powder

  • 1/2 tsp Turmeric

  • 1 1/2 tsp Cumin powder

  • 1/2 tsp Coriander powder

  • 2-3 tbsp chopped coriander leaves

Assemble:

  • 6-8 slices of bread

  • 1/3 cup flour 

  • 1/2-2/3 cup water 

  • 2 cups sesame seeds

Directions: 

  1. Boil and peel potatoes. Mash and keep aside.

  2. In a pan add oil. Add chopped onions and cook for 4-5 mins till its starts to caramelise.

  3. Add green chilis, garlic paste and scallions and cook for 1-2 mins.

  4. Add green peppers and cook for 1-2 mins.

  5. Add tomatoes and cook for 5-6 mins till it cooks down and thickens.

  6. Add all spices- turmeric, red chili, cumin, coriander, salt, and pepper and mix it in.

  7. Cook the entire mixture for 3-4 mins and let it cool.

  8. Once cooled add the mashed potatoes and mix it together.

  9. Cut bread into circles using a cutter/bowl. I got 2 circles from each slice.

  10. Mix the flour and water together. Add a pinch (less than 1/8 tsp) of salt to it.

  11. Take a circle of bread and top with the mixture. The mixture thickens should be more than the bread thickness.

  12. Dip the bread mixture side into the flour mixture and then roll it and cover with sesame seeds. The bread can get covered a bit with the flour mixture as well.

  13. Shallow fry or air fry them.

    • Shallow fry in medium high heat oil. Be careful of the sesame seeds in the oil.

    • Air fry in a preheated air fryer at 380F for 15-18 mins, flipping it mid way. Be sure to spray it well with butter/oil before cooking.

  14. Serve immediately with ketchup, coriander churn or a chili garlic sauce.

Notes/Tips:

  • Use a thick bread that hold it shape well. Don’t use a soft bread.

  • Make sure the vegetable layer is twice the height of the bread.

  • Use the flour mixture to stick the vegetable layer to the bread if it doesn’t stick.

  • Don’t skip dipping it in sesame seeds for added crunch.

  • Serve it with ketchup or Maggi hot sauce (my fav pairing)

  • Don’t skip spraying it before air frying. That helps give it cooler and cook properly.

  • You can make the filling a day before and keep in the fridge.
