15 min Veggie Udon noodles

15 min veggie udon noodles is a quick flavorful meal made in a matter of mins and is so so delicious. I made this when i was just making lunch one day & I was so happy with it that i had to recreate it and share this. I am obsessed with noodles- I could have it 2 times a week easily especially they can quick to toss and make- this is one of those. You can add any vegetables you want so this also helps empty out the fridge. Its perfectly saucy but you can just make more of the sauce if you like extra saucey noodles. It is a great balance of garlic, spice, sweet and earthy flavors. This recipe will def help in those crazy long days or quick lunches.

Ingredients: 

For the sauce:

  • 1.5 tbsp chilli garlic paste

  • 1 tbsp sriracha

  • 1.5 tbsp Gochujang paste

  • 3 tbsp dark Soya sauce

  • 1 tsp chilli/white vinegar

  • 2 tsp Honey

  • 1-2 tsp chilli flakes

  • 3 tbsp water

For the noodles:

  • 1 medium white onion sliced

  • 3 scallions stems chopped

  • 1/2 bell pepper sliced

  • 1 baby bokchoy chopped in strips

  • 1/2 cup heaped spinach shopped in strips

  • 5-6 mushrooms thinly sliced

  • 1-2 star anise

  • 2 tbsp sesame oil

  • 1 tbsp ginger paste

  • 9.5 oz udon noodles

  • 2-3 tsp salt to taste

  • 1/2 tsp pepper

  • 1 tsp Sesame seeds


To garnish:

  • Green part of Scallions chopped

  • Sesame seeds

Directions: 

  1. Boil noodles as per package instructions- I had to boil mine in rapid boiling water for 4 mins. Do not over boil them.

  2. Mix all the sauce ingredients together in a bowl. Keep aside.

  3. In a pan on medium heat, add the oil.

  4. Add onions and cook for 2-3 mins till they start becoming translucent.

  5. Add mushrooms and cook for 2-3 mins.

  6. Add in the star anise and ginger paste and cook it in for 1 min till it gets fragrant.

  7. Add in the peppers and scallions and cook for 1-2 mins.

  8. Add in the spinach and bokchoy and mix till it starts wilting.

  9. Add in the sauce, salt and pepper and mix it all together.

  10. Add in the boiled noodles and mix it all together.

  11. Add 1 tsp sesame seeds and mix.

  12. Garnish with chopped green scallions and sesame seeds. Serve warm.

Notes/Tips:

  • Any kind of thick noodles would be great like hakka noodles if you don’t have udon noodles.

  • Toss in any vegetables you like. You would need to steam vegetables like carrots before adding them.

  • Don’t skip the star ansie because it enhances the flavor a lot. If you have powder, add 1/2-1 tsp while cooking the ginger paste.

  • If you like saucy noodles increase the sauce to 1.5 times.

  • If you like garlicky noodles, add 1-2 tbsp chopped garlic while cooking the onions.
