White Sauce
White sauce is a classic recipe that you can use to make so many dishes. This is something that anyone can make since it is so easy. It goes well with pastas, gratins, fillings and so much more. This recipe will give you a very creamy sauce. I personally love using Ajwain or Nutmeg powder in the sauce because it really enhances the flavour.

Servings: 2 cups

Ingredients:
30g Butter
30g AP Flour
400 ml Milk (Cold)
1 tsp salt
1/2 tsp pepper
70g Heavy cream
25g cheese
1 pinch Nutmeg or Ajwain powder (Optional)
Directions:
In a pan melt the butter.
Add the flour, and mix well. Cook the paste well so that the flour gets cooked well.
Add the milk in 3 parts- 1st addition add about 100 ml, using a spatula mix it well so that it becomes a thick paste and ensure there are no lumps. 2nd & 3rd addition use a whisk and mix it well into the sauce.
Add the cream and mix it well.
Add the salt, pepper & spice (optional) and stir well.
Add the cheese and cook it its melted and mixed well.
The sauce is ready to serve!
Notes / Tips
The cheese i use - Italian mix. If it is fresh cheese i like to use a mixture of gruyere, emmental and mozzarella.
Use cold milk, it helps cooking and accentuates the flavour.
Using nutmeg or Ajwain powder is optional, but it really helps the flavour.
If you want a thinner consistency, skip the cream.
Be sure to use a whisk to avoid lumps.
If you need to reheat it, you can add milk/water.
Vegan- Use any vegan milk and cream. Use a plant based butter but not nut butter.
