Veggie Sweet Potato Black bean Pretzel buns burger with a mustard cheese sauce

I’ve mentioned this before but it needs to be said again, I love burgers! They are so versatile and you can play with the fillings and patties and buns! This is one such veggie burger recipe- Veggie Sweet Potato Black bean Pretzel buns burger with a mustard cheese sauce!! The pretzel buns are a perfect pair with the mustard cheese sauce and caramelised onions! The sweet potato black bean burgers balance the favours so well without overpowering any flavor. This burger is a perfect recipe for game days or any other day! This recipe does have many components but its so easy to make and its so worth it. You gotta try this burgers and see for yourself why i’m going on and on about it.

Servings: 4-5 burgers

Prep Time: 20-30 mins

Cooking Time: 1 hour

Total Time: 1.5 hours


Ingredients: 

Patties: 

  • 1.5 cups boiled & mashed Sweet potato 

  • 1 cup boiled Black bean

  • 1 tbsp corn starch  

  • 1/3 cup chopped Onions

  • 1 tbsp Garlic powder 

  • 1-1.5 tsp Salt 

  • 1/4 tsp Pepper

  • 1 tsp Cumin powder

  • 1/2 tsp Paprika 

  • 1/2 tsp chili flakes

  • 2 tbsp dried parsley 

  • 1/4 tsp ajwain/nutmeg powder

  • 1/4 tsp black salt 


Caramelised Onions:

  • 2 cups thinly sliced onions

  • 1 tbsp oil

  • 1/2 tsp salt

Mustard cheese Sauce:

  • 1/2-2/3 cup Milk

  • 2 tsp corn starch 

  • 1 cup Cheddar cheese

  • 1 tbsp ground Mustard sauce

To assemble:

  • 4-5 Pretzel Burger buns or the buns of your choice

  • Tomatoes in thin slices

  • Spinach leaves

  • Ketchup (I like to mix it with chili flakes)

Directions: 

  1. Patties: In a bowl, add the boiled and mashed sweet potatoes, black beans, onions, garlic powder, corn starch and all the seasonings and spices- salt, pepper, black salt, paprika, parsley, chili flakes, ajwain and cumin.

  2. Mix it all together, while mashing the black beans with a fork. Mix till it comes together.

  3. Form into patties and cook. I prefer cooking it in the air fryer.

    • Pan fry- Cook in an oiled pan till both sides are golden brown.

    • Air fry- In a preheated air fryer lightly grease the patties and cook for 390F for 18-22 mins flipping it midway.

  4. Caramelised onions- In a pan on low heat add butter. As the butter melts, add the onions and give it a good toss. Let it cook on low for 20-25 mins as the patties cook. Keep stirring in intervals to ensure an even cook.

  5. Mustard Cheese sauce- In a sauce pan on low-medium heat add cheese, corn starch and milk and whisk together. Keep whisking as the cheese comes together. Once its forma. smooth cheese sauce consistency add the mustard sauce and mix it. Your cheese sauce is ready!

  6. Burger Buns- Slice burger buns in half and brush with butter. Cook it on a skillet or in a preheated oven at 350F for 6-10 mins till the buns are toasted.

  7. Assembly-

    • On a base spread ketchup (or mixed with chili flakes if you want)

    • Spread some spinach leaves over the ketchup.

    • Place a patty over it.

    • Spread some mustard cheese sauce over the patty.

    • Top with caramelised onions.

    • Place a tomato slice over it.

    • Place the top of the burger bun and close the burger.

  8. Serve with your favourite condiments and enjoy!

Notes/Tips:

  • I like mashing the beans in the mixture so that it blends well in patty mixture.

  • I like to boil and mash my mashed potatoes. I cut them and place in an instant pot with little water and salt. Pressure cook them for 6 mins with natural release. Once released, I peel the potatoes and mash them.

  • Pretzel buns pair extremely well with the mustard cheese sauce and caramelised onions which is why I highly recommend them.

  • Cooking on low is very important for that caramelised onion flavor.

  • Keep whisking the cheese sauce so that no lumps are formed and it all comes together.
