Veggie Hummus Sandwich

Ingredients: 

  • 8 slices of sourdough bread

  • 1.5-2 cups of hummus; click here for a homemade hummus recipe

  • 1 tbsp olive oil

  • 8 oz halloumi cheese cut into small thin squares

  • 1-2 slicing/sandwich tomato cut into 16 thin slices

  • 1 medium red onion cut into 16 thin slices

  • 1 head of romaine lettuce cut into thin strips; check notes for how I prep them

  • 1/2 big cucumber or 2 mini cucumbers cut into thin strips or slices

  • 2-3 tbsp dill finely chopped

  • 2-3 tbsp zaatar seasoning; divided

  • 1-2 tbsp spicy honey

  • 1-2 tbsp spicy paste/ hot sauce, sandwich spread

Directions: 

  1. Prep all the vegetables and keep ready.

  2. Halloumi: (Cook the halloumi when ready to assemble so it doesn’t get chewy) Put a pan on medium heat and add olive oil. Once warm, add the halloumi squares to the pan and cook one side till golden brown. Some water is released in the beginning while cooking which is normal. Sprinkle about 1/2 tbsp of zaatar over the pieces and flip them over. Reduce the heat slightly; the other side will take less cooking time. Once both sides are golden brown, turn off the heat and cover the pan till you assemble to keep the halloumi soft.

  3. Assemble:

    • Toast the bread and spread about 2 tbsp on each slice of bread.

    • On one bread layer the cucumber and onion slices. Sprinkle about 1 tsp of zaatar and 2 tsp of dill over the onions.

    • On the other slice layer the tomato slices. Spread about 1 tsp of a spicy spread over the tomatoes. Top it with the lettuce.

    • Put halloumi pieces over the onions. Drizzle a bit of spicy honey over the halloumi.

    • Sandwich the slices close.

  4. Serve warm with your favorite sides like fries, chips, pickles, and more!

Notes/Tips:

  • Halloumi gets chewy and rubbery when cold so always keep it covered in the pan to prevent that.

  • Lettuce- I like to wash the head of lettuce in cold water and let it soak in cold water for 5 minutes. Then drain and dry it.

  • You can use any seed bread for this recipe or it even tastes great with ciabatta bread.

  • If you can’t find halloumi you can swap it with paneer.
