Veggie Burger Bowl

These veggie burger bowls are a delicious, healthy, fiber-filled, and filling meal. It is basically a deconstructed burger as a bowl. It is full of greens and vegetables and you can totally customize it. You can use your favorite homemade burger patty or store-bought patties. This is a really easy meal to make and a great way to have the veggies. You can meal prep a lot of the components and keep them. This is almost a burger in a salad form. Serve it with slider buns if you want! You can easily make this vegan and gluten free.

Servings: 2-3 bowls

Prep Time: 15-20 mins

Cooking Time: 10-15 mins

Total Time: 30-45 mins


Ingredients: 

  • 3-6 burger patties (1-2 per bowl; check notes)

  • 3-6 slices of cheese (optional; you can use any cheese slice you like)

  • 1.5-2 tbsp chili paste

  • 1.5-2 tbsp mayonnaise

  • 1.5-2 tbsp coriander chutney

  • 4-6 oz leafy greens; I used a mix of romaine and butter lettuce

  • 8-10 mushrooms cut into thin slices

  • 1 tbsp butter

  • Salt and pepper to taste

  • 1/4 cup Onions chopped

  • 1/4 cup tomato chopped

  • 1/2 bell pepper chopped

  • 1/2-2/3 cup corn kernels

  • 1 mini cucumber cut in circles

  • Fries or sides of your choice- I air-fried sweet potato fries

Directions: 

  1. Cook burger patties as per the recipe or package instructions.

  2. If you use cheese, top the patties with cheese for the last 1-2 minutes left to cook and let it melt over the patties.

  3. Cook the fries or side of your choice as per package instructions.

  4. Chop the greens roughly to the size you like.

  5. Add chopped onions, tomatoes, and peppers to a bowl and mix it together.

  6. In a pan add butter and once it melts add the sliced mushrooms. Saute it for 5-7 mins till cooked through. Season with salt and pepper.

  7. Assemble: Divide all the greens & veggies into 2-3 bowls.

    • In a wide bowl on one side, add the greens.

    • On the other side, add the sauteed mushrooms, corn, cucumbers, and the onion-tomato-peppers mixture. See the video.

    • Over the greens, top the burger patties.

    • Spread the chili paste over one or both the patties. I like to pipe mayonnaise over one patty and chutney over one patty.

    • On the other side of the greens, add the fries or the side you want.

  8. Your bowl is ready! If you want you can serve it slider buns if you want.

Notes/Tips:

  • You can use any burger patty you like - homemade or store-bought. For a homemade patty recipe- click here. My favorite store-bought patties are by Deep Kitchen.

  • You can use any veggies you like in any form. For eg, you can add pickled onions to the bowl.

  • I recommend using greens like lettuce that are crunchy and have a bite.

  • You can meal prep the veggies and keep them ready in the fridge.
