Best ever Vegan Fudge Brownies

Vegan Fudge Brownies are so fudge and chocolatey you won’t even guess its vegan! Perfect squares of chocolate topped with chocolate chips and whatever else you want you need to try this! After all the attempts to get to the perfect vegan brownie I got this! It is the perfect amount to fudge that melts in your mouth, holds it shape and gives a delicious bite with the cocoa nibs (if you have it). Whether you’re Vegan or not this brownie recipe is a must try.

Servings: 15-20 brownies

Prep Time: 15 mins

Cooking Time: 20 mins

Chilling Time: 4+ hours

Total Time: 6+ hours

Ingredients: 

  • 1 cup/198g white sugar 

  • 1/2 cup /56g brown sugar 

  • 2 tbsp/14g flax meal with 6 tbsp water 

  • 2/3 cup warm water

  • 1/2 cup/108g neutral oil

  • 1tbsp vanilla 

  • 1/2 cup/48g cocoa powder

  • 1/2 cup/ 92g chocolate chopped up 

  • 1 1/2 cups/226g sifted all purpose flour 

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 2/3-3/4 cup Chocolate chips cocoa nibs and salt to garnish 

Directions: 

  1. Preheat oven to 350F. Prepare a baking tray by greasing it and placing a parchment on it.

  2. Mix together flax meal and water to make the flax eggs. Let it sit for 10 mins.

  3. In a bowl, add chocolate and oil and melt together.

  4. In a bowl add white sugar and brown sugars and whisk it together.

  5. Add the melted chocolate oil mixture to it and whisk.

  6. Pour in the hot water and whisk it together.

  7. Add in the vanilla essence and flax eggs and whisk.

  8. Add the flour, salt, cocoa powder and baking powder and whisk till combined.

  9. Pour the batter in the prepared tray and smoothen the top.

  10. Sprinkle coca nibs, chocolate chips and sea salt on tp as you wish.

  11. Bake it at 350F for 17-21 mins till its almost baked though. Pierce a toothpick through it. It should come out mostly clean with some moist crumbles (not batter).

  12. Let the tray cool outside for 1-2 hours. Let it chill in the fridge for atleast 2 hours and then slice and serve.

Notes/Tips:

  • Flax Meal- If you don’t have flax meal, Grind flax seeds till fine.

  • Do not over mix.

  • Cocoa nibs adds a great texture and bite to the brownie. Chocolate chops melt and nibs are toasty in the oven giving a great balance.

  • Use a neutral oil like vegetable or canola or sunflower oil.

  • Bake till it’s almost done. Over baking it will make it dense. Pierce a toothpick through it and there should be moist crumbles not batter on it.

  • Let the brownies cool in the firdge before cutting.
