Vegan Beetroot Quinoa Burger

Burgers are one of my favourite food groups (yes you read that right). I am always up for burgers so you’ll always find me more than happy experimenting with Vegetarian burger recipes. Introducing you to these Beetroot quinoa burgers which are vegan! They are crusted with everything bagel seasoning and assembled with caramelised onions, mushrooms and so much more! An absolute feast this is more of a sloppy burger because of everything in it so be ready for some messy eating which is so much fu sometimes! All the flavors complement each other so well. Also the coolers are just stunning. Serve this with your favourite burger sides and enjoy!

Servings: 6-8 burgers

Total Time: 1-2 hours

Ingredients: 

  • 1 tbsp Olive oil

  • 3/4 cup Shallots/onions finely chopped

  • 7-8 cloves Garlic finely chopped

  • 2-3 serranos/green chili finely chopped

  • 1/2-2/3 cup Quinoa boiled

  • 25-28oz boiled and crushed Beetroot

  • 3 Tbsp Whole wheat flour

  • 2 tbsp Basil pesto/paste

  • 3 tbsp Flax meal

  • 1 tbsp Sriracha

  • 1 tbsp Tahini

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp chili powder

  • 1-2 tsp Salt as per taste

  • 1/4 tsp Pepper

  • 1/3 cup Everything bagel seasoning optional coating

Assembly:

  • Sautéed Mushrooms

  • Pickles

  • Caramelised onions

  • Sriracha Aioli

  • Cheese slices

  • Arugula/ Rocket leaves/Baby Spinach

  • Burger buns


Directions: 

  1. In a pan on low-medium heat add olive oil. Add chopped garlic, chili and shallots.

  2. Cook it for 5-7 till it browns.

  3. Add boiled and mashed beetroot and cook it for 3-5 mins till It starts to thicken.

  4. Add seasonings, spices and sauces- salt, pepper, chili flakes, onion powder, garlic powder, sriracha, tahini and pesto. Mix it all together and cook for 2-3 mins.

  5. Add flour and flax meal and cook for 3-5 mins. Stir frequently so the raw taste goes away.

  6. Let it cool.

  7. Once cooled add boiled quinoa and mix in.

  8. Once cool shape into patties.

  9. Coat with bagel seasoning if you want.

  10. Pan fry the patties on a griddle or airfry them.

  11. Place a slice of cheese over it and cover while on at the griddle make it melt.

  12. Assemble on a toasted bun with sriracha aioli, sautéed mushrooms, caramelised onions and greens. Check notes.

  13. Serve warm with your favourite sides.

Notes/Tips:

  • You can add 1 boiled and mashed potato it your patties are not holding shape. They should if you cook the excess water off the beetroot.

  • Make sure you cook the beetroot well so that it hold’s its shape. Also let it cool completely.

  • Assembly:

    • I sautéed mushrooms withs ose slat and pepper in olive oil.

    • I caramelised onions in olive salt with some salt.

  • You can make the patty mixture from before and keep. Shape and cook before serving.

  • I like this patty with a brioche bun or a sesame bun.
