Spicy mushroom Wai wai Noodles
These spicy mushroom Wai wai Noodles are my favorite way to use Wai- wai noodles! I used to have this back in Kolkata in a cafe and it was so good I had to recreate them. This is a one-pot recipe and it’s so delicious. The noodles are spicy and the mushrooms with sauces work so well together. It’s so easy to make and a perfect snack or dinner for a rainy day. If you love mushrooms, this recipe is for you! You can add other veggies if you like but I like it with just mushrooms.

Ingredients:
1/2 tbsp Butter
Oil packet in Wai wai
2-3 cloves of Garlic thinly sliced
5-6 Mushrooms thinly sliced
2 Spring onions chopped
Wai wai Seasoning packets
Wai Wai Noodles
1 -1 1/4 Water
1/2 tbsp Soy sauce
1/2 tbsp sriracha
1/2 tsp ketchup
1-1.5 tsp Red chili flakes
1/4 tsp cumin powder
Directions:
In a pan on medium heat, add butter and wai wai oil packet.
Once melted and warm add mushrooms and garlic. Cook it for 5-8 mins till the mushrooms are cooked through and the garlic starts to brown.
Add chopped scallions and cook for 1-2 mins.
Add wai wai seasonings, red chili flakes, and cumin powder and mix well.
Add noodles and 1 cup of water to the pan.
Let the water come to a boil and give the noodles a flip in the water.
Cover the pan with a lid and reduce the heat to low-medium. Let it cook for 3-5 mins till it’s almost cooked through. Stir 2-3 times in between.
Add greens of the scallions, soy sauce, sriracha, and ketchup. Mix it in the noodles.
If needed add water and stir. Cook the noodles while stirring till you want. I like them drier rather than soupy.
Serve and enjoy! It’s delicious warm and cold.
Notes/Tips:
If you arent comfortable cooking the noodles in the same pot, boil them separately and then add them in.
You can add more veggies to it if you want.
Use fresh mushrooms not canned.
Make sure the noodles are well coated in the mixture.
