Spicy Masala Airfried Corn ribs

This is a desi twist to the tiktok viral corn rib trend. This recipe is my grandmother in laws recipe. She is quite a genius in the kitchen and has taught me so many recipes that she would experiment with which became family favourites. She would make this spice mixture rub it over the corn and cook it on the stove top. Its spicy and delicious with yogurt giving the perfect balance. When I saw the tiktok trend of air frying corn ribs I knew I had to make recipe but cooking it in the air fryer. IT IS SO GOOD! Everyone at home loved it! I am so happy I can replicate her recipe giving it a twist and sharing it with the world. Just seeing how happy it makes her is worth it. This corn is perfect for grilling days or as a side and snack year round. Add less chilli (as per taste) and kids will loveeee this . Try it and see for yourself!

Servings: 6-8 servings

Ingredients: 

  • 3-4 ears of corn 

  • 2 tbsp red chili powder

  • 1.5 tbsp coriander powder

  • 0.5 tbsp cumin powder

  • 1/4 tsp turmeric

  • 1-2 tsp salt 

  • 2 tbsp veg oil, divided

  • 3/4-1 tsp mustard seeds

  • About 1.5 cups yogurt to serve with

Directions: 

  1. Preheat air fryer to 370F.

  2. Cut the ear of corn in half vertically and then in half again giving 4 pieces from each ear of corn. Use a sharp knife and a see-saw motion helped slice them.

  3. In a bowl mix red chili powder, coriander powder, cumin powder, turmeric powder and salt.

  4. Add 1 tbsp of oil to the spice mixture and mix till combined.

  5. Wear gloves for this step- Rub the spice mixture on the corn ribs (just the side of the kernels)

  6. Place the corn ribs in a preheated air fryer.

  7. Sprinkle the mustard seeds over the corn ribs. Drizzle 1 tbsp oil over the ribs.

  8. Airfry at 370F for 14-18 mins. Flip them midway. Use gloves or tongs to flip it over. For other ways to cook check notes.

  9. Serve with yogurt. Dip it in and enjoy!

Notes/Tips:

  • Be sure to wear gloves and work with tongs so that you don’t get spice on your hands.

  • Plain yogurt pairs great to dip in and have.

  • Be sure to flip the corn over midway so that it cooks evenly.

  • You can coat the corn pieces and keep from before. Cook it right before serving.

  • If you don’t have an air fryer-

    • Bake it in the oven at 380F for 12-28 mins till its cooked through. You won’t get this shape though.

    • Cook it on a stove top- Half boil the corn before following the same instructions. on a pan add the 1 tbsp oil and add mustard seeds. Once it starts to crackle, add the corn and cook. Cover it so that the steam helps cooking it. Flip it over to make sure all sides are cooked. You will not get the shape as the air fryer. The spices will be more sticky and won’t dry up as it does in the oven or air fryer.
