Spicy cheesy Mushroom Toast

I love mushrooms so you’ll always see me finding new ways to incorporate in my food. This spicy cheesy mushroom toast was one such random evening thought and when I made it I had to share it. It’s such a perfect balance of flavors and textures and so yummy! The chili oil takes the toast to the next level with that added flavor and I don’t need to say how cheese and mushrooms are a perfect combination. This is a must try recipe for all mushroom lovers!

Servings: 2-3 toasts

Prep Time: 5 mins

Cooking Time: 20-30 mins

Total Time: 30-40 mins

Ingredients: 

  • 2-3 slices of Sourdough/tuscan bread

  • 1 tbsp Chili oil

  • Goat cheese or goat cream cheese

  • 1/4 cup shredded mozzarella cheese

  • A handful of arugula

  • 2 tsp chili crunch

  • 8-10 Sliced white mushrooms

  • 2 tsp butter

  • 2-3 tbsp chopped shallots/onions

  • 1 tsp garlic paste

  • 1 tbsp chopped sage

  • Salt to taste

  • 1/8 tsp black pepper

  • 1/2 tsp Chili flakes


    Directions: 

  1. Preheat oven/airfryer to 400F.

  2. On sliced bread, drizzle chili oil and spread it out. Bake/ airfry at 400F for 6-7 mins, flipping it midway.

  3. Prepare mushrooms-

    • In a pan on low-medium heat add butter.

    • Add mushrooms, shallots and garlic paste and cook for 4- 6 mins stirring well. Add sage salt pepper and Chili flakes, and cook for 2-3 mins till the mushrooms are cooked through. Do not over cook the mushrooms as they cook again. Just cook till it’s cooked through. Keep aside.

  4. On the more toasted side of the bread, spread goat cheese and top with shredded cheese.

  5. Top with mushrooms and cook in the oven airfryer for 4-6 mins till the cheese is melted.

  6. Top with arugula and chili crunch.

  7. Slice and serve hot! Enjoy.

Notes/Tips:

  • You can make the mushroom mixture and keep from before as a part of meal prep.

  • For the recipe of tel he chili oil I like to use, click here.

  • If you don’t have goat cheese or goat cream cheese you can use cream cheese.

  • Sage helps to bring out the earthiness flavor but you can’t skip it if you like.

  • You can use spinach if your don’t have arugula.

  • Do not over cook the mushrooms as they cook again. Just cook till it’s cooked through
