Spiced Tofu Wrap

Spiced tofu wraps are a deliciously healthy meal to make. The marinated tofu with the Cajun dressing adds so much flavor to this wrap you’ll never say tofu is boring. This recipe is vegan friendly and use a gluten free wrap to make it gluten free. Light on calories this is a no brainer for lunches, especially after a heavy weekend. Plus it doesn’t taste like *low calorie food* .

Servings: 6-8 wraps

Prep Time: 15 mins

Marinating Time: 3+ hours

Cooking Time: 20 mins

Total Time: 4 hours

Ingredients: 

Tofu and marinade:

  • 14-16 oz firm/ extra firm Tofu cut in thick squares

  • 1 tbsp Soy sauce

  • 1 tbsp tomato paste  

  • 1 tbsp Cajun seasoning

  • 1 tbsp Olive oil

  • 1 tbsp Garlic powder

  • 1 tsp Salt to taste

  • 1/4 tsp Pepper

  • 1 tsp Ginger powder

  • 1/2 tsp chili flakes 

  • 1/4 tsp honey/maple syrup

  • 1/2-2/3 cup water

    Cajun dressing :

  • 2 tbsp mayonnaise

  • 1/2 cup ranch

  • 2 tsp Cajun seasoning

    Assembly:

  • Tortillas of your choice

  • Spring mix/kale/spinach- I used spinach

  • Cheese (sliced or grated) I used pepper jack cheese slices

  • 6-8 grape Tomato cut in threes

  • 1/2-1 Pickled onions- optional

Directions: 

  1. Marinade : In a pan add bowl add all the ingredients for the marinade and mix.

  2. Dip the tofu squares in the marinade and coat it well. Cover and let it sit for 3 -8 hours.

  3. Cajun dressing: In a bowl mix the ranch, mayonnaise and Cajun seasoning. Keep aside.

  4. Once the tofu is marinated, cook it on a warm griddle till each side is cooked through. Cook right before assembling.

  5. Assemble:

    • Slightly warm a tortilla.

    • Place cheese over it.

    • Spread the Cajun dressing.

    • Top with greens of your choice.

    • Top with the cooked tofu.

    • Add tomatoes and onions over it.

    • Close into a wrap and serve.

  6. Serve warm and enjoy!

Notes/Tips:

  • The longer you marinate the tastier the tofu is. If you marinate overnight, leave it in the refrigerator.

  • Be sure to use firm tofu as it can break otherwise. Use a tofu press if you have one.
    If you don’t a tofu press- drain the tofu water that comes in the container. Wrap the tofu block in a paper towel. If it’s a thin paper towel, double wrap it. Place something that is a little heavy on it that presses it down slightly. Let it sit for 20-30 mins.

  • You can use any cheese in this recipe.

  • If you don’t have Cajun seasoning make your own at home by mixing 3 parts of paprika 2 parts of onion powder and garlic powder and 1 part of salt, black pepper powder, oregano, chili flakes.

  • If you don’t have grape tomatoes you can use Roma tomatoes cut in thin slices.

  • If you would like to add pickles onions you can pickle any way you like. I pickles white onions in a mixture of water with lemon juice, maple syrup and vinegar.

  • Use vegan ranch, Mayo and cheese to make this recipe vegan.
