Shortcut Eggless Tiramisu

Tiramisu is such a favourite and loved dessert but many find it intimidating to make (which isn’t but I get why it its perceived even I thought at one time). So to solve this i’m sharing the easiest shortcut eggless tiramisu recipe which is loved by everyone! It is so easy to make but you do need to give it time to soak up and chill in the fridge, that is something that really helps so don’t rush that. This recipe is so easy and so good that no will guess that it is a shortcut recipe. A perfect balance of flavors with coffee and so creamy this is a must try recipe. Servings: 4-6 servings

Chilling Time: 4-6 hours 

Total Time: 6+ hours  

Ingredients: 

  • 110g /1/2 cup Cream cheese or mascarpone cheese softened

  • 14-16 oz pound cake cut in slices, you can use vanilla or marble pound cake. I used store-bought. You can also use ladyfingers to make it more authentic.

  • 1 cup /175g brewed coffee - stronger is better

  • 1/4 cup coffee liquor- optional.

  • 2-3 tbsp castor sugar

  • 1- 1 1/4 cup cup/220g whipping cream

  • 1 tsp vanilla essence

  • Whipped cream and chocolate to garnish

Directions: 

  1. In an electric/stand mixer add the softened cream cheese or mascarpone cheese. Add the sugar and whisk it till smooth. It can take 3-5 mins, be sure to scrape the edges of the bowl.

  2. When the cheese is completely smooth, add the heavy cream and whisk it on medium speed. Scrape the edges of the bowl in between. Whisk till it forms soft-medium peaks and well combined. Keep aside.

  3. Assemble: You can assemble in a big bowl or smaller individual bowls.

  • Layer with the pound cake as the bottom layer. Cut in smaller pieces as needed to make sure there are barely any spots.

  • Soak it well with a mixture of brewed coffee and liquor.

  • Spread a layer of the cream mixture, do not make it too thick.

  • Put some chocolate shavings over it.

  • Repeat the layers at least once upto 2 times.

  • The top layer of cream should be a little thicker. Decorate the top with chocolate shavings, cream, cocoa powder as you like.

4. Chill for 4-6 hours upto overnight and serve. Chilling helps the flavors soak in. It’s always better the next day.

5.Take it out 20-30 mins before serving and enjoy!

Notes/Tips:

  • For this recipe I like to use pound/butter cakes but feel free to use ladyfingers to make it more authentic. Depending if you like it more chocolate or not, use marble or vanilla cake.

  • Use strong coffee. I brewed nespresso coffee at home for this.

  • Be sure to use room temperature cream/mascarpone cheese.

  • Scrape the edges of the bowl and mix the cheese and cream well so it does not curdle or separate. Do NOT over mix.

  • Be sure to let it chill. It always tastes better the next day/overnight.
