High-Protein Paneer Bell Pepper Toast: The Ultimate Vegetarian Snack

Paneer Bell Pepper Toast was something I had growing up for breakfast or as a snack. It is a perfect appetizer for parties as well and goes great on a cheese board, it is so easy to make. Try this easy & delicious recipe and it will be a super hit!

Servings: 4-6 toasts

Prep Time: 10 minutes

Cooking Time: 20-25 mins

Baking Time: 8-10 minutes

Total Time: 40-50 minutes

 Ingredients: 

  • 2 cups Crumbled Paneer

  • 1/3 cup Finely chopped red onions

  • 3/4 cup Finely chopped green bell pepper

  • 3-4 cloves of garlic minced

  • 1 tbsp ginger paste

  • 1.5 tbsp Tomato Paste

  • 1 tbsp ketchup

  • 2 tbsp Water

  • 1-2 tsp Salt as per taste

  • 1 tsp cumin powder

  • 1/8 tsp ajwain powder

  • 1/2-1 tsp Sugar as per taste

  • 1-2 tsp chilli flakes as per taste

  • 1/2 Tsp Pepper

  • 1/4 cup chopped coriander leaves

  • 8-10 slices of bread (for 4 toasts depending on how you are serving it)

  • 1/2 cup grated mozzarella or Amul cheese

  • 1 tbsp oil (I used avocado oil)

Directions: 

  1. In a pan on medium, add oil.

  2. Add onions and peppers and cook till the onions are translucent for 3-4 mins.

  3. Add garlic and ginger paste and cook for 2-4 minutes till fragrant.

  4. Add all the spices and seasonings- salt, sugar, chili flakes, cumin powder, ajwain powder & pepper, tomato paste, ketchup and water.

  5. Cook it well for 4-5 minutes till the tomato paste is well cooked. Add more water if needed.

  6. Add in the crumbled paneer, and coriander leaves. Cook for 3-4 minutes mixing and mashing it well till the mixture starts holding its shape.

  7. Let the mixture cool and it is ready.

  8. You can prepare it in two ways- one is on a regular bread slice and one is by forming a double-layer ring sandwich.

  9. For the double-layer ring sandwich - Cut the slices of bread with a round cutter to give it a circular shape. Further cut half the round slices, with a smaller circle in the middle to make it like a ring. On the circular slice, spread the paneer mixture. Top the ring slice on top of the paneer. Sprinkle cheese on the ring.

  10. For the regular slice- Slightly toast a bread and then spread the paneer mixture on top. Sprinkle some cheese on top.

  11. Bake in an oven or air fryer oven for 5- 8 minutes at about 375F or till the cheese melts & bread gets toasty.

  12. Serve warm.

Notes/Tips:

  • While mixing in the paneer, squish it further to make it mix well.

  • You can make the mixture & keep it in the fridge for 2-3 days.

  • You can add ketchup instead of tomato paste. Skip the sugar if adding all ketchup.

  • It tastes amazing with Indian Masala Chai.
