Paneer & Corn Tava Burgers
If you’re looking for a fun burger recipe, look no further. Tava burgers are delicious burgers which are cooked on a griddle with butter and spices giving it that extra oomph. I first tried it when my Nani (maternal grandmother) made it and I’ve been a fan ever since. This has a paneer and corn patty which has very simple flavors to balance it! The melted cheese is an extra treat in the burger. This is so tasty and an absolute treat! A perfect vegetarian recipe for game days, not to mention every other day! So basically a corn and paneer patty topped with cheese sandwiched in a burger bun with spicy mayo which is all cooked in butter and spices! It’s too good not to try!

Servings: 4-5 burgers

Ingredients:
Paneer Corn filling:
1 tbsp Peanut oil
1/2 cup finely chopped Onion
1/2 cup chopped bell Peppers
1/2 cup chopped Spring onions
1-2 Green chili chopped; optional
1 tsp Ginger paste
2 tsp garlic paste
1 tsp cumin powder
1 tsp chili powder
1/4 tsp Garam masala
1/8 tsp amchur powder
1-2 tsp Salt as per taste
1/4 tsp Pepper
160g crumbled paneer
1 cup corn kernels
2 tbsp Corn starch
1/4 cup Chopped Corriander
1/2 cup boiled & mashed potato
Assembly:
4-5 burger buns
3-4 tbsp mayonnaise
2-3 tbsp spicy sauce; I used spicy Maggi sauce
4-5 Cheese slices
1-2 tbsp Butter
2-3 tsp Chili powder
1-2 tsp Chaat masala
1-2 tbsp Nigella seeds
1 tbsp sesame seeds
Directions:
In a pan on low-medium heat add oil.
Once warm, add onions and cook it for 4-6 mins till it starts to brown.
Add bell peppers, spring onions and green onions and cook for 3-5 mins.
Add ginger and garlic paste and cook for 2-3 mins.
Add spices- cumin powder, salt, pepper, red chili powder, garam masala, amchur powder and cook for 1-2 mins.
Add corn and mix well.
Add corn starch and cook for 2-3 mins to avoid any raw taste.
Add chopped coriander and mix together. Take it off the heat and let it cool slightly.
Add mashed potatoes, crumbled paneer and mix together. Mash paneer and potatoes while mixing and form a compact mixture.
Let it cool and then form into patties.
On a burger bun spread a mixture of mayonnaise and chili sauce.
Top a bun with the patty and a slice of cheese and close it.
Put a skillet (if you have cast iron use that) on low heat.
Add butter and add chili powder, chaat masala, sesame seeds and nigella seeds. Mix together.
Place a burger down and cook. Flip it over and cook on both sides till both are crispy.
Serve warm with your favorite condiments.
Notes/Tips:
You can make the filling from before and keep.
You can even use it as a sandwich filling if you don’t have burger buns.
I like making it in a cast iron pan to help make it crispier.
Keeping the filling simple helps to balance the spices when the burger is cooked.
Cooking on low flame helps to keep the burger crispy and not burn the spices.
