Oven Roasted Salsa

Salsa is something that wins everyone’s hearts so you must know how to make it (according to me). It also helps that it’s one of the easiest things to make. This is an oven roasted salsa which is so easy and so delicious. It’s tangy, spicy and so flavorful making it an amazing side. You literally just need to roast the veggies in the oven and mash it up to get this treat! For this salsa I like to use both Roma and tomatillos for the added flavor. Make it and store it in your fridge for a week easily.

Servings: 6-8 servings

Prep Time: 5-10 mins

Cooking Time: 50 mins

Total Time: 1 hour


Ingredients: 

  • 2-4 Serrano/jalapeno peppers (use more than 2 if you like spicy) 

  • 6-8 garlic cloves 

  • 5 tomatillos

  • 4-5 Roma tomatoes 

  • 1 tbsp chopped cilantro 

  • 1 tbsp chopped parsley 

  • 1 tsp Salt as per taste

  • 1 tsp lime juice

  • 1/4 tsp Pepper

  • 1/4 tsp honey

Directions: 

  1. Preheat oven to 450F.

  2. Wash and dry tomatoes and serranos well.

  3. Line a baking tray with foil and light grease it.

  4. Place both the kinds of tomatoes, serranos and garlic cloves on the tray. Lightly grease the veggies.

  5. Bake at 450F for 30-40 mins. In 20 mins flip the veggies over. Take the garlic cloves out in 20 mins and mash using a fork. Let the other veggies cook in the oven for another 10-20 mins till they are well roasted and cooked through.

  6. In a bowl add the roasted vegetables and mash it up. Add the mashed garlic to it and mix.

  7. Add the chopped herbs, salt, pepper, lime juice and honey and mix.

  8. Let it cool for 15 mins.

  9. Serve with your favorite Mexican dishes.

Notes/ Tips:

  • If you don’t have tomatillos use Roma tomatoes.

  • Serranos make it very spicy so use jalapeños if you like it less spicy.

  • You can freeze the salsa and keep it for 2-3 months.

  • This salsa pairs the best with chips.
