Orange Chocolate Almond Barfi

Orange Chocolate is one of my favorite combinations so I had to make an Indian fusion dessert with those flavors. An orange creamy almond barfi layer topped with chocolate and garnished with sliced almonds and sea salt. The favours work so well it’s a magical melt in your mouth moment. A fun unique fusion take on barfis that is a must try dessert for Diwali and festival season. Kids will love this barfi recipe along with adults.

Ingredients: 

Orange Almond Barfi layer:

  • 3 tbsp ghee

  • 1 1/4 cup milk powder

  • 2/3 cup almond flour 

  • 1/3 cup milk

  • 1/2 cup orange juice

  • 1/2 cup sugar 

  • 2-3 Orange color drops

  • 1/4 tsp orange essence


Chocolate Layer:

  • 1 cup baking chocolate chopped up 

  • 2 tbsp coconut oil or butter


Toppings (optional):

  • 1/4 cup sliced almonds

  • 1-2 tsp sea salt

Directions: 

  1. Grease a pan of your choice and layer with parchment paper. I used a loaf pan.

  2. Keep a heavy bottom pan on low-medium heat, add ghee.

  3. Once warm, add almond flour. Using a whisk, whisk it together till smooth. Cook for 3-4 mins on a low flame to cook the flour.

  4. Add milk powder and using a whisk, whisk it together. Cook for 3-4 mins. It should be a mixture like slightly wet sand.

  5. Add sugar and mix it together.

  6. Add orange juice and milk & combine using a whisk to make sure there are no lumps.

  7. Add a few drops of orange colouring and orange essence and mix.

  8. Keep cooking the mixture on a low-medium flame, stirring continuously so that it doesn’t burn. Cook till it thickens for about 8-10 minutes. Test it by passing a spatula through the middle. The mixture should not come back and join immediately.

  9. Transfer the mixture to the pan and spread it out evenly.

  10. Top the layer with cling wrap so that its touching it and chill in the fridge for 30 mins.

  11. Melt the chocolate with butter/coconut oil. You can melt on a double boiler or microwave.

  12. Pour it over the orange almond layer. Be sure to remove the cling wrap before pouring. Spread it evenly over.

  13. Top with sliced almonds and sea salt.

  14. Let it chill for at least 1 hour in the fridge till it all sets.

  15. Cut in pieces and serve.

Notes/Tips:

  1. The better chocolate quality you use, the better the taste. I use Callebeaut couveture.

  2. I used orange juice from a bottle. You can use fresh or packaged. Packaged orange juice has a stronger flavor which is helpful in this recipe.

  3. Make sure you stir so that it doesn't stick or burn or form lumps.

  4. Ensure you do the test to make sure its cooked and thickened enough to set.

  5. You can make the chocolate thinner if you like, reduce the quantity by half.

  6. Cut it in any shape you like.

  7. This can last in the fridge for 3-4 days.
