Mixed Fruit Cheesecake Tart

Ingredients:
Graham Cracker crust:
8.5-9.5 oz Graham cracker or digestive biscuit of your choice
7.5-8.5 tbsp melted unsalted butter
Filling:
14 oz cream cheese; softened
1/3 cup castor sugar
1.25 cups heavy cream
1 tsp vanilla paste or 2 tsp vanilla extract
Zest from 1 large Lemon
Assemble:
3/4 cup melted white chocolate
Fruits of your choice- I used a mix of oranges, kiwi, strawberries, mango and blueberries
Directions:
Crust: In a food processor add the Graham crackers and melted butter. Pulse together till combined and it has a wet sand consistency. Be sure to scrape the edges of the processor to ensure it’s all mixed together well.
Transfer the mixture to a pie dish and start shaping it along the pie dish.
I like to use a small measuring cup to form the edges and get a clean crust.
Chill the crust in the freezer for 15-25 mins.
Melt the white chocolate and pour it over the crust. Use a spatula to even it out and spread it around.
Put the dish in the freezer for 10 mins.
Filling: In a food processor add the softened cream cheese, vanilla, and sugar. Be sure to scrape the edges of the processor
Blend till smooth. Add the heavy cream carefully and blend till the mixture starts to thicken till soft peaks form. It takes about 3-4 mins.
Add the lemon zest and mix well.
Pour the filling into the chocolate-covered crust and let it chill in the fridge for 6-8 hours to set.
Once the filling has been set, you can top it with fruits of your choice as you like.
Slice and serve!
Notes/Tips:
Softeed cream cheese will mix well and not leave lumps.
Make sure the filling has thickened before adding it to the crust.
Do NOT skip the lemon zest or chocolate layer.
Use any fruits you like. Slice them thin!
