Mexican Paneer & Corn Sliders- Vegetarian Indian Mexican fusion slider recipe

Looking for a delicious and easy-to-make fusion dish that combines the bold flavors of Indian and Mexican cuisines? These Mexican Paneer & Corn Sliders are exactly what you need! Featuring a flavorful mix of paneer, roasted corn, and veggies all tossed in a spicy tomato base, these sliders are layered with a refreshing slaw for crunch, coriander chutney, creamy spicy sauce, and a layer of gooey cheese. The sliders are then topped with a buttery mixture and a jalapeño slice, and baked to golden perfection. The best part? The oven does all the cooking, making this vegetarian dish a breeze to prepare. Perfect for any occasion, these sliders are sure to impress with minimal effort!

Ingredients: 

Mexican Paneer Corn Mixture:

  • 250-300g paneer cut into cubes

  • 1 cup corn kernels (I used roasted corn kernels)

  • 1 small red/yellow onion chopped finely

  • 4-5 garlic cloves minced

  • 1/2 jalapeno chopped finelt

  • 1/2 bell pepper chopped finely; you can use any color you like

  • 3-5 scallions chopped finely

  • 1-2 tsp salt as per taste

  • 1/2 tsp pepper

  • 1 tsp sugar

  • 1/2-1 tbsp paprika powder as per taste

  • 1.5 tsp cumin powder

  • 1 tsp coriander powder

  • 1/2 tsp nutmeg powder

  • 1 tsp oregano

  • 1 tsp chili flakes

  • 1/8 tsp cinnamon powder

  • 3 tbsp tomato paste

  • 2 tbsp Mexican hot sauce

Creamy Spicy Sauce:

  • 4-6 tbsp mayonnaise

  • 2-3 tbsp Mexican hot sauce of your choice

Assembly:

  • 3/4 -1 cup shredded slaw mix 

  • 1/2-1 cup coriander chutney

  • 3/4-1 cup mix of shredded mozzarella cheese & cheddar cheese

  • 5-6 Cheese slices- ideally use pepper jack cheese

  • 12 Savory butter slider buns

  • 1 jalapeno cut in 12 thin slices

Butter Mixture:

  • 1/2 stick of unsalted butter; 50g

  • 1 tbsp everything bagel seasoning

  • 1 tbsp Mexican hot sauce

  • 1/2 tbsp sugar 

Directions: 

  1. Spicy sauce Mixture: Mix all the ingredients and keep aside.

  2. Mexican Paneer Corn Mixture: In a mixing bowl add paneer, corn, jalapeno, onions, peppers, scallions, garlic, tomato paste, hot sauce, oregano, cumin powder, cinnamon powder, cinnamon powder, paprika, nutmeg powder, salt, pepper, and sugar. Mix it till combined and everything is coated well.

  3. Preheat the oven to 350F.

  4. Assembly: Assemble the buns on a parchment-lined baking tray to make it easier.

    1. Slice slider buns horizontally in half.

    2. On the bottom half of the buns spread the creamy spicy sauce.

    3. Top it with shredded slaw mixture and then pepper jack cheese.

    4. Layer the paneer corn mixture over it and spread it out well.

    5. Layer the shredded cheese over it.

    6. Spread the coriander chutney on the top part of the slider buns.

    7. Sandwich the slider buns over the cheese slices.

    8. Using a toothpick poke holes in the slider buns. be sure to get all the buns all over.

    9. Butter mixture- Melt butter and mix everything bagel seasoning, Mexican hot sauce, and sugar.

    10. Pour the butter mixture over the buns and spread it all over.

    11. Place one jalapeno slice over each slider and press down slightly.

  5. Cover the buns with foil and bake for 30-35 mins at 350F.

  6. Let it rest for 3-5 mins once out of the oven.

  7. Remove the foil, cut, and serve.

  8. You can serve these with any condiments you like, but it’s not needed as these are saucy themselves.

Notes/Tips:

  • Use savory slider buns. Sweet buns can make this recipe too sweet. I use Kings Hawaiian Savory slider buns

  • I used Haldiram paneer or Amul paneer, which isn’t chewy.

  • Ideally, use two different kinds of cheeses. I like the combination of shredded mozzarella & cheddar cheese and pepper jack slices.

  • Do NOT forget to poke the holes in the slider buns.

  • Covering with foil is a must so the cheese melts well.
