Veggie Mexican burger-Delicious Black bean burger with a Corn salsa

Looking for a delicious and satisfying veggie burger recipe? This Mexican Black Bean Burger with Corn Salsa is packed with flavor and perfect for your next meal! The black bean patty is incredibly moist and flavorful, that is airfried to give a delicious crisp. It is layered in a soft brioche bun with fresh lettuce, spicy pepper jack cheese, and a zesty corn salsa made with tomatoes, onions, and jalapeños taht adda a touch of sweetness. Topped with a bold spicy aioli and tangy coriander chutney, this burger is the ultimate fusion of Mexican flavors and a vegetarian twist. Perfect for BBQ parties, weeknight dinners, or any time you want a flavorful and healthy veggie burger that’s anything but dry! This reicpe can be meal prepped as well!

Ingredients:
 

Black Bean Patties: 

  • 1 can of black beans

  • 2/3 cup chopped red onions, about 1 small onion

  • 6-8 Garlic cloves minced or finely chopped

  • 4-5 scallions chopped

  • 1 red bell pepper chopped into small cubes

  • 2 tsp cumin powder

  • 2 tsp paprika powder

  • 1tsp red chili powder; I used Kashmiri chili powder

  • 1.5 tsp Coriander powder

  • About 2 tsp Salt as per taste

  • 1/2 tsp Pepper

  • 1 tsp Sugar

  • 2 tbsp Mexican hot sauce; I used salsa verde

  • 2 small golden potatoes, peeled boiled, and mashed; About 2/3-1 cup

  • 1/2 cup breadcrumbs

  • 2 tbsp avocado oil

  • Oil or oil spray to cook the patties

Corn Salsa:

  • 1/2-2/3 cup Corn kernels

  • 1/4 cup Finely chopped red onions

  • 2/3 cup Finely chopped tomatoes

  • 1/4 cup Finely chopped jalapenos

  • 1 tsp Salt as per taste

  • 1 tbsp Lime juice

Creamy Spicy Aioli:

  • 1/3 cup mayonnaise

  • 3-4 tbsp of your favorite Mexican hot sauce

  • 2 tbsp spicy ketchup; I used a habanero ketchup

To assemble:

  • 5-6 Burger buns

  • 5-6 Pepper jack Cheese slices

  • 5-6 Lettuce leaves

  • 1/3-1/2 cup coriander chutney

  • Butter to toast the buns

Directions: 

  1. Put a pan on low-medium heat and add avocado oil. Once warm add onions, scallions, and, garlic. Cook it together on low-medium till fragrant and the onions are translucent. Cook for about 3-4 minutes.

  2. Add the bell pepper and black beans. Cook for 3-4 minutes.

  3. Add all spices- cumin powder, red chili powder, paprika powder, coriander powder, and hot sauce. Add seasonings- salt, pepper, and sugar. Cook for 2-3 minutes till fragrant.

  4. Once the mixture is cooked well let it cool.

  5. Corn Salsa: I like to prep the salsa when the mixture is cooling. In a bowl mix corn, onions, jalapenos, and tomatoes with salt and lime juice. Keep it aside.

  6. In a large mixing bowl, add the cooked beans mixture. Mash it well.

  7. Add the mashed potatoes and breadcrumbs. Mix well till the mixture is well incorporated. It should hold its shape.

  8. Taste the salt/spice at this stage and add more if needed.

  9. Lightly dampen your hand or use gloves and form the mixture into patties the size of the burger buns.

  10. Preheat the oven or air fryer. Oven to 425F and air fryer to 400F.

    • Oven- Cook the patties in the oven on a parchment-lined baking tray. Spray oil on both sides. Cook at 425F for 14-18 minutes flipping it over midway and then at the end. Spray oil when you flip it over midway.

    • Air fryer- Spray oil on both sides. Cook at 400 for 14-18 minutes flipping it over midway and then at the end. Spray oil when you flip it over midway.

  11. Once cooked, let it cool slightly before taking it out on a plate.

  12. Creamy Spicy Aioli: Mix mayonnaise, spicy ketchup, and Mexican hot sauce.

  13. To assemble: Warm the buns on a griddle or oven with some butter.

  14. Spread coriander chutney on the bottom bun.

  15. Top it with a lettuce leaf.

  16. Top the patty with a slice of cheese over it. You can meet the cheese by broiling it in the oven or grill for 30 seconds to a minute so it melts on the patty and then layer it. OR

  17. You can place the patty on the bun and then layer with a cheese slice. Use a blow torch to melt it.

  18. Layer with corn salsa,

  19. Spread a layer of the creamy spicy aioli over it.

  20. Sandwich the burger close.

  21. Serve with your favorite sides like onion rings, French fires, etc.

Notes/Tips:

  • The potatoes need to be well boiled so that they mash easily.

  • You can make the patties from before and keep them as long as they are airtight. You can freeze them in an airtight bags as well. They last for 3 months in the freezer.

  • I love using brioche buns if possible, the buttery bun makes it better.

  • If broiling the cheese, broil the patty with cheese first then layer it. If you are using a blow torch then you can layer it over the bun and melt it but be careful!

  • I like using butter lettuce- I like it in burgers. You can use romaine lettuce if you like that.
