Masala Paneer & Corn Puffs

Servings: 9-12 pcs as per size

Ingredients: 

Filling:

  • 1.5 tbsp oil/butter

  • 1 small red onion finely chopped

  • 2-4 scallions chopped

  • 1/2 tomato finely chopped

  • 2.5 tbsp coriander chutney 

  • 1.5 tbsp sriracha 

  • 1 cup corn kernels; I use frozen roasted corn

  • 1.5 tsp Chili flakes as per taste

  • 1/2 tsp Cumin powder 

  • 1/4 tsp Coriander powder

  • 1/4 tsp Turmeric powder

  • 1 tsp Salt as per taste

  • 1/4 tsp Pepper

  • 1/4 tsp Sugar 

  • A pinch of Cinnamon powder 

  • 1 tbsp mayonnaise

  • 1.5 tbsp milk 

  • 200-220g paneer cut into cubes

Assemble:

  • 1 sheet puff pastry, about 9 oz

  • 2-4 tbsp Sriracha 

  • 1/2-3/4 cup shredded mozzarella cheese 

  • Oil to brush

  • 1 tbsp everything bagel seasoning or sesame seeds

Directions: 

  1. Filling: In a pan on low-medium heat add oil and let it warm up.

  2. Add chopped onions and cook for 3-4 mins till it starts to become translucent.

  3. Add scallions and cook for 1-2 mins.

  4. Add the chopped tomatoes and cook for 4-5 mins till they start to break down.

  5. Add all the spices- cumin powder, chili flakes, coriander powder, turmeric powder, cinnamon powder, salt, sugar, and pepper along with sriracha and coriander chutney, and corn kernels. Cook for 3-4 mins till it’s all combined well.

  6. Add paneer cubes, milk, and mayonnaise and mix well. Cook for 2-4 mins till it’s all mixed well. The filling is ready, let it cool.

  7. Fill and bake: Preheat oven to 400F.

  8. Roll out a puff pastry sheet slightly. Cut it into squares. I cut it into 9 squares.

  9. Brush each square with sriracha over it.

  10. Top each square with filling and leaves space to close it and then sprinkle cheese over it. I filled it diagonally to form a triangle. Close them and form the shape you like.

  11. Seal the edges closed with a fork.

  12. Brush the surface of the oil and sprinkle everything bagel seasoning over it.

  13. Place on a parchment-lined baking tray and bake at 400F for 15-20 mins till golden brown and cooked through.

  14. Serve with your choice of condiment and enjoy! I like to serve it with chili garlic maggi sauce.

Notes/Tips:

  • Let the paneer filling cool before filling in puff pastry.

  • Don’t skip the everything bagel seasoning if you have it as it completes the flavor profile. If you can’t find it in a store, you can make your own, the recipe is here.

  • You can use Amul cheese if you want.

  • Don’t skip the mayonnaise or milk, it makes the filling creamy and makes the color of the green filling light and bright!

  • You can use any corn kernels you have available like white corn kernels or golden corn.
