Masala oven Rolls

Masala oven rolls is a mindblowing treat taking butter rolls to the next level! They are layered with veggies, cheese and the most flavorful sauces and baked in the oven. It requires no prep and is so quick to make -everything just comes together in the magic of the oven in less than an hour. A delicious Desi snack that is just perfect for game nights or parties. Trust me when i say this- You CANNOT just have one. My husband and i tried but we could not resist. This recipe came together with the brainstorming of my husband and I- and not exaggerating when i say that you will just love this! It is just an explosion of flavors, textures and that melted cheese! Also its pull part so that makes it more fun!

Ingredients: 

  • 1 pack of 12 savoury Butter rolls- I used savory Hawaiian king rolls

  • 3 tbsp Mayonnaise

  • 1.5 tbsp Ketchup/Maggi masala sauce

  • 1.5 medium sized golden Potato thinly sliced in circles- peeled and not boiled- check notes

  • 3/4th medium sized red Onion thinly sliced in circles

  • 1/2 green Bell pepper thinly sliced in semi circles

  • 4-5 Provolone cheese slices

  • 4-5 American cheese slices

  • 3/4th stick (6 tbsp) melted unsalted Butter- ideally use European butter like Kerrygold

  • 1/2 tsp Mustard

  • 1.5 tsp garlic powder

  • 3 tbsp Brown sugar

  • 1.5 tbsp Coriander Green chutney

  • 1/4 tsp Chaat masala

  • 1/4 tsp Salt

  • 1/4 tsp red chilli powder

  • 1/2-3/4 tbsp Black cumin seeds/Kalonji

  • 1-2 tbsp sev/Bhujiya Optional

Directions: 

  1. Preheat the oven to 400F.

  2. Slice the entire butter bun in half horizontally without pulling them apart.

  3. Mix melted butter, cilantro chutney, mustard sauce, brown sugar and garlic powder. Keep aside.

  4. Mix mayonnaise and ketchup. Spread it out on the bottom bread layer. Work on a parchment paper or silicone baking mat.

  5. Layer cheese on the bottom layer.

  6. Layer the thin slices of potato onion and bell pepper on the cheese.

  7. On the other side of the bread, spread about 1/3rd of the butter mixture.

  8. Sandwich the breads together.

  9. Using a toothpick poke holes on the top of the bread rolls- VERY important. Spread the rest of the butter mixture over the rolls. (If it falls over put it back on top and sides)

  10. Mix the black cumin seeds, salt, chaat masala and red chilli powder together.

  11. Sprinkle it over the top of the rolls.

  12. Cover with foil and and bake for 15 mins at 400F. Reduce the temp to 370F and bake it for 20 mins.

  13. Sprinkle some bhujiya/sev on top. Optional.

  14. Pull apart and enjoy!

Notes/Tips:

  • Use savory butter rolls. It will be too sweet if you use sweet butter rolls.

  • If you like spicy food, make the chutney spicy or add some chilli flakes/ green chilli paste to the butter mixture.

  • If you do not have brown sugar, use 1 tbsp of white sugar but you will not get the glaze effect on top.

  • Covering with foil and temperature change in the oven is a must.

  • Make sure the potatoes are sliced thin so that they cook in the oven.

  • You can use any cheese slices you want, i recommend using 2 kinds for the flavor.

  • Use any cilantro chutney you want.

  • Make sure you make enough holes because you want the sauce to soak through.
