Masala Butter Pasta
This is a delicious simple butter pasta with Indian spices adding flavor. Don’t confuse it with butter masala pasta because it’s not in the gravy. It’s butter based with spices like red chili powder and cumin powder finished with cheese to give it that balance. This is a delicious Indian fusion pasta recipe that is perfect for anyone including kids. This recipe is so easy to make and is ready in 20 mins making it an easy weekday lunch! Ingredients:
1.5 tbsp Butter
2 tsp Olive oil
10-12 cloves Garlic in thin slices
1 tsp Red chili powder
1/4 ts Turmeric powder
1/2 tsp Cumin powder
3/4 cup Pasta water
10 oz Pasta- I used farfelle
1/2-1 tsp Salt
1/4 tsp Pepper
1/3 cup chopped Coriander
1/2 cup grated pecorino/ Parmesan Cheese
Directions:
Boil pasta till al dente and drain. Reserve pasta water.
In a pan add butter and oil and mix.
Add sliced garlic and cook for 3-5 mins till it starts browning.
Add the spices- red chili powder, turmeric powder, salt, pepper and cumin power and cook for 1-2 mins.
Add in the boiled pasta and pasta water and mix.
Add chopped coriander and pecorino cheese and mix.
Serve warm garnished with more coriander.
Notes/Tips:
Let the garlic cook well in the butter before adding the spices.
You can add some Amul cheese as well.
I used farfalle pasta but feel free to use any shape you want.
You can make this from before and keep in meal prep.
If you want to make it creamy add some cream in the end when you add the pasta water.
The chili doesn’t make it spicy but if you wang it no spice at all skip the green chili.
Adding butter and oil helps the butter from burning.
Use vegan butter or oil to make it Vegan.
