Mango Cottage Cheese Toast: A Refreshingly Sweet and Savory Breakfast!

This recipe features a slice of toast topped with creamy cottage cheese, sweet and juicy sliced mangos, a drizzle of tangy balsamic vinegar, a sprinkle of spicy chili crunch, fresh herbs, nutritious hemp seeds, and a pinch of sea salt. Not only is this toast bursting with flavor, but it's also packed with protein and other essential nutrients. So why not give your taste buds a treat while nourishing your body at the same time? Servings: 3-4 toasts

Prep Time: 15-20 mins

Cooking Time: 5 mins

Total Time: 20-25 mins

Ingredients: 

  • 3-4 slices of bread; I used sourdough

  • 12-14 oz Cottage cheese 

  • 2-3 ripe Mangoes 

  • 1-2 tbsp Balsamic vinegar/glaze 

  • 1 tbsp Hemp seeds 

  • 1 tbsp Chili crunch 

  • 1 tsp Finely chopped rosemary leaves

  • A pinch of sea salt

  • 1/2 tbsp honey; optional


Directions: 

  1. Slice mangoes into thin slices.

  2. Toast the bread till toasty. You can make it as toasty as. you like.

  3. Top the toast with cottage cheese. Spread it as thick or thin as you like.

  4. Top the cottage cheese with the sliced mangoes.

  5. Over the slices mangoes, drizzle balsamic vinegar, chili crunch, hemp seeds, honey, sea salt, and chopped rosemary leaves.

  6. Serve immediately and enjoy!

Notes/Tips:

  • Sea salt really brings it together so don’t skip that!

  • You can skip rosemary if you can’t get it. You can use very little chopped mint instead.

  • I used store-bought chili crunch, you can use any you like!

  • Hemp seeds add a little crunch and protein!

  • You can also use chopped mangoes if you don’t want to slice them.
