Kachumber Papad Cones
These Kachumber Papad cones are such a fun way to serve Papad. Kachumber is a classic Indian salad that is made of chopped veggies like cucumbers, onions etc with some seasonings. Papad is roasted and shaped into a cone and filled with the Kachumber and topped with a cilantro yogurt chutney. These are some of the favorite things to have with papad, all combined together and formed into a cone. It’s a really easy way to add cuteness to daily meals or even in parties.

Ingredients:
Kachumber:
1/3 cup finely chopped Cucumber
1/4 cup finely chopped Tomato
1/4 cup finely chopped red Onions
1-2 Green chili
1 tbsp Lemon juice
1/8 tsp Salt
1/8 tsp Black salt
1/8 tsp sugar
1/4 tsp Chili powder
1/4 tsp Cumin powder
Cilantro Yogurt Chutney:
2.5 tbsp Cilantro chutney
1/4 cup Yogurt
Assembly:
3-4 Papad of your choice
Cilantro leaves to garnish
Directions:
Kachumber:
In a bowl add the chopped tomatoes, onions, cucumbers, and chili.
Add lemon juice, salt, black salt, sugar, cumin powder, and chili powder and mix.
Let it sit for 10 mins and drain the liquid at the bottom.
Cilantro Yogurt Chutney:
Mix together coriander chutney and yogurt till combined. Keep aside.
Assembly:
Cut a papad into half carefully.
Roast the papad over a flame or in a microwave till just cooked.
When it is still hot, roll the papad into a cone QUICKLY! Be fast while doing it otherwise it will set and break if you try to shape it.
Once you have the cones ready, fill them with a little kachumber.
Drizzle some of the chutney over it and garnish it with a cilantro leaf.
The cones are ready! enjoy.
Be sure to serve them immediately as it will get soggy. Another serving method is to keep it all separately and let people fill the cones as they want.
Notes/Tips:
Draining the Kachumber helps to keep the cones crisp for a little longer.
You can make the cones (without filling) and keep it in an airtight container for 2-3 days.
While shaping the cones work fast. When it cools and you try to shape it, it will crack.
Don’t over toast the Papad as that will lead it to cracking while shaping as well. Cook the Papad till just roasted.
