Honey Saffron Cheesecake Sliders

Ingredients:
 

Cheesecake filling:

  • 12-14oz cream cheese softened

  • 1/2-3/4 tsp cinnamon powder as per taste

  • 1/4 tsp nutmeg powder

  • 2 tbsp honey melted

  • 1/8 tsp salt

Assembly:

  • 12 sweet Hawaiian slider buns

  • 15-20 pcs biscuits/graham crackers; I used parle-g biscuits

Sweet Butter Mixture:

  • 3 tbsp salted butter

  • 20-25 strands of saffron 

  • 2.5 tbsp sugar

  • 1 tbsp honey

Directions: 

  1. Cheesecake Filling: In a mixing bowl add softened cream cheese, cinnamon powder, nutmeg powder, salt, and honey. Mix it together using a whisk/spatula till incorporated well.

  2. Assembly: Assemble the buns on a parchment-lined baking tray to make it easier.

    1. Slice slider buns horizontally in half.

    2. On the bottom half of the buns spread the cheesecake filling.

    3. Top it with half of the biscuits, crumbled.

    4. Sandwich the slider buns closed.

    5. Using a toothpick poke holes in the slider buns. be sure to get all the buns all over.

  3. Sweet Butter mixture- Melt butter in a pan on low-medium heat and saffron and sugar. Mix till combined well, the sugar will melt and the mixture will thicken slightly. Take it off heat and let it cool for 2 mins. Add honey and mix.

  4. Pour the mixture over the sliders and spread it out evenly.

  5. Top with the remaining crumbled biscuits.

  6. Cover the buns with foil and bake for 15-20 mins at 370F.

  7. Let it rest for 3-5 mins once out of the oven.

  8. Remove the foil, cut, and serve.

Notes/Tips:

  • Use sweet slider buns. I used Kings Hawaiian Savory rolls for this recipe.

  • Use softened cream cheese and melted honey otherwise, they won’t mix well.

  • Do NOT forget to poke the holes in the slider buns.

  • Covering with foil is a must.

  • This is best had warm!
