Creamy Mixed Sauce Pasta

This is an indulgent creamy mixed sauce pasta that is so delicious you’ll slurp the sauce! Its creamy with the perfect balance of tomato sauce. The fresh herbs bring out so much flavor and the pasta water helps making it a saucy dream. I used fettuccine for this recipe but it works with any pasta obviously. Its SO good once you try it you’ll be hooked. I mean you can’t go wrong with these flavors so I really don’t have more to say. Everyone who has tried this sauce has licked the bowl clean, so maybe you're next, lol? I have added some notes to make this recipe less indulgent if you want.

Ingredients: 

  • 1/2 tbsp butter

  • 1/2 tbsp olive oil

  • 3-4 cloves garlic chopped

  • 1 shallot sliced

  • Salt to taste

  • 1/4 tsp Pepper

  • 1/2-1 tsp Chili flakes

  • 1/2 tsp Oregano 

  • 2/3 cup red pasta/pizza sauce 

  • 2-2.5 oz Cream cheese

  • 2.5-3 tbsp white sauce 

  • 3/4-1 cup pasta water 

  • 10-12 oz pasta, I used fettuccine

  • 2 tbsp chopped Basil 

  • 2 tbsp chopped Parsley 

  • 2-4 tbsp mozzarella 

Directions: 

  1. In a saucepan, boil water with salt. Don’t add too much water, just enough to boil. This leads to a starchy pasta water and adds flavor and makes the sauce creamier. Boil pasta till al dente. Drain the pasta and save 1 cup pasta water.

  2. Put a pan on low-medium heat and add butter and olive oil. Once warm add garlic and shallots.

  3. Cook for 5 mins till they start to brown.

  4. Add Chili flakes, salt, pepper, oregano and cook for 1 minute.

  5. Add red sauce and cook for 3-4 minutes till it thickens.

  6. Add white sauce and cream cheese and mix till combined and the cream cheese has melted.

  7. Add chopped herbs and cook for 1-2 minutes.

  8. Add 1/2 -2/3 cup pasta water and combine.

  9. Add boiled pasta and toss it in.

  10. Add mozzarella cheese and mix. Add more pasta water if you like it saucier.

  11. The pasta is ready. Top with Chili flakes and serve!

Notes/Tips:

  • YES, I highly recommend homemade sauces. I have linked the recipes in the ingredients. It makes ALOT of difference.

  • Use fresh herbs please. Again, it makes the world of difference.

  • You can store this sauce in an airtight container in the fridge for a week.

  • Less indulgent options:

    • Cream cheese and mozzarella helps making it creamier, skip one if you want to reduce calories.

    • Use lentil pasta to add more protein.

    • Sauté vegetables of your choice and add it as a side.

  • Don’t forget saving the pasta water that’s the secret to the sauce!
