Ingredients:
6 slices of white/butter Bread
1-2 English cucumber
2-3 tbsp softened butter
About 1/4-1/3 cup coriander chutney; I used homemade click here for the recipe
3 slices of pepper jack cheese
Directions:
Use a peeler and cut the cucumber into very thin slices.
Spread some of the softened butter on one side of each bread slice.
Spread some coriander chutney, about 1.5 tbsp over the butter on half of the slices.
Place a cheese slice over the coriander chutney.
Sandwich it close with a buttered slice.
Cut the sandwich into small circles using a cutter. I cut one sandwich into 4 small circles.
Shape the slice of cucumber by folding it over into a tree shape. Keep the top fold small and then bigger folds. Use a toothpick to keep it in place. See video.
Poke the toothpick end onto the sandwich. This will make it look like the tree is over the sandwich.
Serve immediately & enjoy!
Notes/Tips:
I used toothpicks with stars on top. This creates the perfect star on top of the tree.
Keep the bread under a dampened cheesecloth, this helps from the sandwiches drying out.
Use seedless cucumbers and make sure the slices are very thin.
I used a small round container to cut it into small circles.
You can eat the scraps as a snack!
Put the cucumbers just before serving or it will dry out.
