Chocolate Pistachio Cupcakes

A moist chocolate cupcake filled with a creamy pistachio filling topped with a fluffy whipped chocolate ganache. These cupcakes are my families new favorite flavor. It’s a delicious balance of flavor and the cupcakes are so moist. The frosting is soft and not too sweet which is my biggest problem with cupcakes to be honest. This is a no brainer recipe based on my families reactions of eating them. These are perfect for Diwali and festive season. These can be made eggless or with egg. You must try these cupcakes! Chocolatey with a perfect balance from pistachios!

Ingredients:

Pistachio filling:

  • 1 cup pistachios (shells removed)

  • 1 cup powdered sugar

  • 1/8 tsp salt

  • 1/4 tsp vanilla essence

  • 1/4 cup water

Garnish (optional):

  • Chopped pistachio

  • Chocolate shavings

  • Rose petals

Directions: 

  1. Remove shells and soak pistachio for an hour.

  2. Prepare the cupcakes using these recipes- for eggless, click here, with egg, click here.

  3. Prepare ganache use this recipe, click here.

    • Once made let the ganache cool.

    • Once its set whip it using an electric whisk till creamy and soft like a frosting. The frosting is ready.

  4. Pistachio filling-

    • Remove the skins from the soaked pistachios.

    • Add them to a blender with powdered sugar, vanilla essence, salt and water.

    • Blend till smooth.

  5. Assembly-

    • Once the cupcakes have cooled, scoop out a bit of the centre.

    • Fill it with the pistachio filing.

    • Frost with the whipped ganache.

    • Garnish with chopped pistachio, chocolate shavings and rose petals as you like.

    • Let it chill for 5 mins and serve!

Notes/Tips:

  • You can store the pistachio paste in the fridge and use it for other desserts.

  • Take the cupcakes out of the fridge 20-30 mins before serving. This makes the frosting soft and more enjoyable.

  • The cupcakes last well for 2-3 days in the fridge.
