Cheesiest Mushroom Quesadilla

The cheesiest mushroom quesadilla recipe that is so delicious! If you like cheese and mushrooms and enjoy Mexican food this recipe is made for you. The roasted mushrooms paired with caramelized onions and all the cheeses and creaminess make this a deliciously indulgent meal. It’s easy to make and you can even make the filling from before and keep which makes it great for meal prep. This is inspired by the quesadillas I would have in Chilis India which was my favorite. This is a delicious weekday recipe, paired with a salad makes it a perfect meal.

Servings: 2-3 quesadillas

Prep Time: 10 mins

Cooking Time: 30 mins

Cooling Time: 30-60 mins

Total Time: 1-2 hours 

Ingredients: 

  • 1 tbsp butter 

  • 2 tsp olive oil 

  • 4-6 garlic cloves minced

  • 1 Serrano or jalapeño finely chopped 

  • 1/2 medium red onion thinly sliced

  • 8-10 oz mushrooms- I used button

  • 2 tbsp chopped fresh Chives

  • 2 tbsp chopped fresh Parsley

  • 1-2 tsp Chili flakes as per taste

  • 1-2 tsp Salt to taste

  • 1/4 tsp pepper 

  • 1/2 cup shredded Jack cheese

  • 3/4 cup shredded Cheddar cheese

  • 1/3 cup Cream cheese at room temperature 

  • 4-6 Tortilla as per taste

Directions: 

  1. In a pan add butter and oil in a pan. Keep the flame on medium, add minced garlic and chili and cook it for 3-4 minutes till it starts browning slightly.

  2. Add sliced onions and cook it for 4-6 minutes. They should start caramelising.

  3. Add mushrooms and cook it for 7-9 minutes. The mushrooms should start roasting.

  4. Add herbs- chives and parsley and spices- chili flakes, salt, pepper and mix it together.

  5. Once it combines let it cool.

  6. When cooled add cream cheese and shredded cheeses and mix it all together.

  7. Fill between two tortillas and sandwich them. Spread butter and grill on a pan. Cook till the cheese is melty.

  8. Slice as you like and serve with your favourite condiments. My favourite is a salsa as it pairs well with the cheesy goodness.

Notes/Tips:

  • Use any mushrooms you like. I used button mushrooms but you can use portobello or cremini mushrooms.

  • You can use a mix of mexican cheese if you like. The cheese should melt well.

  • The cream cheese helps make it creamy and melty.

  • You can use any tortillas you like. Use gluten free tortillas to make it gluten free.

  • If you like it spicy, add more chopped chilis.

  • You can add more vegetables if you like.
