Happy Cooking!

Servings: About 8-12 servings

Prep Time: 15-20 mins

Cooking Time: 30-40 mins

Baking Time: 15-20 mins

Total Time: 1-1.5 hours

Ingredients:

For the Caramelized Onions:

  • 3 medium yellow onions finely chopped

  • 2 tbsp olive oil

  • 7-9 garlic cloves minced

  • 1 tbsp garlic powder

  • 1-1.5 tbsp chili flakes; as per taste

  • 1/2 tsp oregano

  • 1-2 tsp Salt to taste

  • 1/2 tsp pepper

To assemble:

  • 150g butter softened, I used salted

  • 3-4 tbsp chopped parsley leaves

  • 14 oz Italian bread loaf

  • 1/2-1 cup mozzarella cheese shredded

  • 1/3 cup parmesan cheese grated; optional

Directions:

  1. Caramelized Onions- In a pan heat up olive oil on low flame. Add the onions and cook it on low flame. Cook till it starts to caramelize. Keep stirring it in intervals so that it does not burn. Make sure the flame is low. In about 12-15 mins the onions should be light brown.

  2. Add minced garlic and cook with the onions for 5-8 minutes till the garlic is fragrant and well cooked. Add 2-3 tbsp water if needed.

  3. Add the garlic powder, oregano, chili flakes, salt, and pepper. Mix it well and cook for 3-4 minutes.

  4. The onions should be caramelized well by now. Let it cool for 5-7 minutes.

  5. Butter: In a mixing bowl add softened butter, the caramelized onion mixture, and parsley, and mix well.

  6. Preheat the oven to 350F.

  7. Slice the bread loaf in half and place it on a parchment-lined tray.

  8. Spread a good amount of butter on both pieces of the bread.

  9. Top with shredded mozzarella cheese and parmesan cheese.

  10. Bake at 350F for 15-20 mins till the bread is toasty and cheese has melted.

  11. Serve warm & enjoy!

Notes/Tips:

  • You can make the caramelized onions and keep them from before.

  • You can keep the butter mixture ready from before.

  • You can make these on separate slices if you don’t want to make them on a loaf.

  • Broil for 2-3 minutes if you want the cheese browned.

  • I like using salted butter but you can use unsalted butter if you want.
