Caprese Grilled Cheese

Caprese Grilled cheese is a delicious crispy sandwich layered with basil pesto, melty mozzarella cheese, pizza sauce and caramelised onions- you can’t go wrong with that right? It is perfectly crispy made on sourdough bread. This has become a new favorite sandwich at our house because it’s just an explosion of flavors and textures. A delicious meal that is so easy to make with easily available ingredients. A must make especially when you want some soul food. Pairs perfect with soup. Trust me you’ll definitely want to try it and then keep making it, we are having it once every 2 weeks.

Ingredients: 

  • 4 sourdough bread slices

  • 2.5 basil pesto

  • 3.5 oz thin sliced mozzarella cheese or shredded

  • 3.5 tbsp pizza sauce

  • 1/2 cup caramelised onion

  • 1 tbsp chilli flakes

  • Butter for grilling

Directions: 

  1. Prepare basil pesto and pizza sauce. You can use readymade sauce if you like but make sure the pizza sauce is chunkier and not to liquid.

  2. Put 1 tbsp olive oil on a pan and caramelise sliced onions on a low-medium flame till they are well browned and caramelised.

  3. Turn a skillet on medium- low flame. Place the slices of bread and lightly toast one side of each slice. This helps prevent the sandwich from getting soggy.

  4. On the toasted side of two slices spread the basil pesto. Top them with caramelised onion. Spread out mozzarellas slices over it.

  5. On the other toasted sides of the bread spread the pizza sauce and sprinkle some chilli flakes.

  6. Close the sandwich. Spread butter on one side of the sandwich.

  7. Place the buttered side face down on the skillet and let it cook till its lightly brown. Keep the flame on low. Spread butter on the top of the slice (the unbuttered side).

  8. Flip the sandwich over and let it start browning. Once it starts browning, cover the skillet with a lid. This will help the cheese melt. Let it cook till it becomes golden brown all over that side.

  9. Flip it over and let the slightly brown side become completely golden brown with the lid over the skillet. Ensure both the sides of the sandwich are well cooked and toasty. The cheese should be melted. This can take 7-8 mins.

  10. Slice and serve warm!

Notes/Tips:

  • Sourdough bread is the best choice for this sandwich but you can use any bread of your choice.

  • Toasting one side of the slices helps preventing it from getting soggy.

  • You can use readymade sauces but i prefer using fresh home made sauces. I have recipe for both- basil pesto and pizza sauce.

  • Ideally use sliced cheese but you can use shredded mozzarella as well.

  • Put the lid on the skillet only once the bread has started becoming brown and toasty or it will get soggy. This helps the cheese melt.

  • You can skip the caramelised onions if you like but it helps bring all the flavors together.
