Caprese Flatbread - Marinated Tomato & burrata flavor perfection

Servings: 4-5 small flatbreads or 1-2 big flatbreads

Prep Time: 15-20 minutes

Baking time: 10-15 minutes

 Ingredients: 

Tomato Marinade:

  • 16-20 oz Cherry/Grape tomatoes; i used a mix of yellow and red tomatoes

  • 2-4 Garlic cloves finely minced

  • 1/4-1/3 cup fresh basil leaves roughly torn/chopped

  • 1/2-1 tbsp Chili paste; I used calabfrian chili paste

  • 2-3 tbsp extra virgin Olive oil

  • 1 tsp Salt as per taste

  • 1/2 tbsp freshly cracked Pepper

Assembly:

  • 4-5 small flatbreads or 1-2 big flatbreads, I used mini naans

  • 1-2 tbsp olive oil

  • 2-3 burrata balls (I used 8 oz balls); check notes for alternative

  • 1-2 tbsp balsamic glaze

Directions: 

  1. Tomato Marination: Add all the ingredients- cherry tomatoes, olive oil, chili paste, basil, garlic, salt, and pepper to a mixing bowl. Toss so it is mixed well and all the tomatoes are coated. Cover and let it sit for 1 hour.

  2. Preheat the oven or air fryer. The oven should be 380F, and the air fryer should be 360F.

  3. Drizzle some olive oil over the bread and brush all over. Bake the flatbread for 4-7 minutes until it is as crispy as you like. Let it cool slightly.

  4. Top the flatbread with burrata cheese and spread it all over. I used 1/2 ball per flatbread. You can see how much you need based on size and preference.

  5. Give the marinated tomatoes a toss and then top the flatbread generously with the marinated tomatoes.

  6. Drizzle with balsamic glaze.

  7. Serve immediately & enjoy!

Notes/Tips:

  • You can marinate the tomatoes and keep them for 2-3 hours.

  • Make sure the tomatoes are dried after washing. You do not want extra water in the mixture.

  • You can brush the flatbread base with any flavored olive oil like chili, garlic, etc for that extra flavor.
