Bread Chaat Baskets

Bread chaat is a common street side food in Kolkata, India which I love so much. It is a piece of bread topped with a potato filling with peanuts, coconut and all the chaat goodness! Here’s my spin of making it, I made oven baked bread baskets filled with the potato filling made into a cup which makes it so cute and easy to serve. This is a great addition to your chaat nights and parties and chaat-cuterie boards. You know you can’t go wrong with anything chaat!

Servings: 10-12 servings

Prep Time: 20-25 minutes

Cooking Time: 15-20 mins

Total Time: 30-40 mins

Ingredients: 

  • 10-12 slices of soft sandwich bread 

  • 3 med golden potatoes boiled and mashed about 1.5 cups mashed 

  • 1/3 cup finely chopped red onions

  • 1/4 cup finely chopped cucumber

  • 1/2 cup finely chopped tomatoes 

  • 1/2 cup Tamarind chutney 

  • 1/2 cup Spicy green chutney 

  • 1/4 cup coconut chopped in small pieces

  • 1/4 cup chopped peanuts 

  • 1 tbsp Ginger paste 

  • 1/2 tbsp garlic paste 

  • 1/4 chopped coriander leaves 

  • 1/2 tsp Chaat masala

  • 1/2 tsp Black salt

  • 1/2 tsp Red chili powder

  • 1/4 tsp Salt as per taste

  • 1/2 tsp Cumin powder 

  • 1/2 cup bhujiya

Directions: 

  1. Preheat oven to 400F. Lightly grease a cupcake tray.

  2. Using a round cutter cut the bread slices. Make a slit midway and overlap it to form into a cup in the cupcake tray. Press down to form the shape well and ensure the slit closes. Use milk if needed to seal the slit close. See video how to form the cup.

  3. Spray butter over the bread cups.

  4. Bake at 400F for 6-8 mins till its crispy and baked and holds it shape.

  5. Filling- In a bowl add the mashed potatoes, onions, cucumbers, tomatoes, peanuts, coconut, ginger paste, garlic paste, Coriander leaves and spices- black salt, cumin powder, chaat masala, red chili powder and salt. Add about 1/4 cup of tamarind chutney and 1/4 cup of spicy Corriander chutney and mix. Taste and add more chutneys if needed. Add about 1/4 cup bhujiya and mix.

  6. Fill the filling into the bread baskets.

  7. Drizzle some chutneys over it and top with bhujiya and coriander leaves.

  8. Serve immediately and enjoy!

Notes/Tips:

  • If you don’t have a spicy coriander chutney, you could add chopped green chilis to it. If you like it spicy, you could anyway add greens chilis.

  • Don’t skip the black salt! It’s adds so much flavor.

  • Use a soft bread that can press easily to form the shape.

  • Make sure the bread cups are well crisped so they hold their shape.

  • Don’t make the filling and keep. The bhujiya, peanuts etc will all get soggy.

  • You can use sev if you want instead of bhujiya. Bhujiya is more commonly used in Kolkata.
