Servings: 4-5 regular bagel sandwiches or 8-10 small bagel sandwiches

Prep Time: 15-20 mins

Total Time: 15-20 mins

Ingredients: 

  • 4-5 regular plain bagels or 8-10 small plain bagels

  • 6 oz cream cheese; softened

  • 1 medium golden potato boiled and peeled cut into slices

  • 1/2-1 red onion cut into thin slices

  • 1 medium tomato cut into thin slices

  • 1/4 medium cucumber, peeled and cut into thin slices

  • 1/3 green bell pepper cut into thin slices

  • 3-4 tbsp coriander chutney

  • 1.5 tbsp Bombay sandwich masala; check notes


Directions: 

  1. Filling: On a chopping board, put the cream cheese, potatoes, bell peppers, onions, cucumbers, tomatoes, coriander chutney, and Bombay sandwich masala.

  2. Use a sharp knife and start chopping everything. It will take 2-3 minutes but chop everything together to get a uniform mixture.

  3. Once everything is well chopped and it’s all mixed well the filling is ready.

  4. Assembly: Slice the bagels in half and toast on both sides.

  5. Spread the Bombay sandwich filling between the bagel slices

  6. Sandwich the bagel close.

  7. Slice and serve! This is delicious cold and hot!

Notes/Tips:

  • Ideally, use plain bagels but sesame bagels work as well.

  • Bombay sandwich masala- if you don’t have it, mix chaat masala, Kashmiri chili powder, garam masala, and a little amchur.

  • Toasting the bagel is important!!

  • Make sure everything is finely chopped and mixed well while chopping.
