Badam halwa Baklava

Baklava inspired by Badam Halwa flavors is a delicious Indian Turkish fusion dessert. Layered of phyllo dough brushed with a butter-ghee mixture and an almond spiced mixture which is baked and drenched in a sugar saffron syrup.
The crispy layers with the the bite from nuts and the sweetness from syrup makes every bite perfect. A perfect cozy dessert to make for Diwali and the festivals which will make everyone so happy. Topping it with all the rose petal makes it so pretty as well. A must try flavor explosion!

Ingredients: 

Phyllo layers:

  • 8 oz Phyllo sheets

  • 3/4 stick unsalted Butter 

  • 2 tbsp ghee 

  • 1 tbsp nut/neutral oil

  • 8-10 strands Saffron

  • 1/8 tsp salt


Nut Layer:

  • 1 cup Almonds 

  • 1 tsp Cinnamon powder 

  • 9-10 strands Saffron  


Sugar Layer:

  • 1/3 cup granulated sugar 

  • 1 tbsp Rose water 

  • 2 tsp Lemon juice 

  • 5-10 strands Saffron 

  • 1 tbsp Honey

  • 2/3 cup water

Directions: 

  1. In a food processor add almonds, cinnamon powder and saffron. Chop it together till it’s all combined and chopped in fine pieces. Keep the mixture aside.

  2. In a pan add butter, ghee, oil, salt & saffron strands. Melt it together. Keep aside.

  3. Preheat oven to 360F.

  4. Grease a pan with prepared the butter.

  5. Place a single phyllo sheet as the base.

  6. Brush some of the butter over the phyllo sheet. Repeat this 3-4 times.

  7. On the 4th-5th phyllo sheet, sprinkle some of the nut mixture over it. About 3-5 tbsp of it.

  8. Place a phyllo sheet over the mixture. Brush butter over the phyllo sheet and sprinkle nut mixture. Repeat this for another 10-12 sheets.

  9. Repeat the only phyllo-butter layers another 2-3 times.

  10. Cut the Baklava through the layers in pieces.

  11. Brush butter on top and bake. Bake at 360F for 20-25 mins till its golden brown on top and cooked through.

  12. While the baklava is baking, prepare the syrup.

  13. In a saucepan, add all the ingredients for the syrup and stir. Mix till combined and sugar is melted. Cook for 2-4 mins till its thickened slightly.

  14. Once out the oven, pour the hot syrup over the baklava in the pan itself.

  15. Garnish with sliced almonds and dried rose petals.

  16. Serve and enjoy.

Notes/Tips:

  1. Do not skip the ghee. That’s what helps giving the halwa flavor.

  2. While not using the phyllo keep it covered so it doesn’t dry up.

  3. Ensure each layer is brushed with the butter mixture. Do not over brush a layer with butter so it doesn’t get soggy.

  4. Soak the baklava with the hot syrup immediately out of the oven. If not it will be come too soggy.

  5. You can cut the baklavas in any shape you like.
