Avocado Feta Guacamole
Avocado Feta Guacamole is my way of making guacamole at home. The feta helps to Bring out all the flavors while adding a tanginess and freshness to it. You gotta try it and see how it makes a world of difference. Have it with chips or veggies or on toast or with your favorite Mexican dishes, it works with all. Definitely one of my favourite dips ever. If you like avocados you gotta try this recipe! Trust me once you do, you’ll be making guacamole at home like this from now.

Ingredients:
2-3 Ripe Avocados
1/2 medium white/yellow Onion chopped
1 medium Tomato chopped
1-2 Jalapeño or Serrano finely chopped as per taste
1/4 cup fresh Cilantro chopped
1/4 cup fresh flat leaf Parsley chopped
1/4 cup freshly squeezed lime juice
1/2 tsp Garlic powder
2/3 cup + 3 tbsp Feta cheese
1/4-1/2 tsp Salt as per taste
1/4 tsp Pepper
Directions:
De-seed the avocados and peel the skin.
In a bowl mash the avocados using a fork.Crumble in 2/3 cup feta and mash.
Add the chopped onions, tomatoes, jalapeños, salt, pepper and garlic powder and mix together.
Add lemon juice and mix.
Top the remaining crumbled feta.
Serve as a dip with chips or veggies or on toasts.
Notes/Tips:
To keep the avocado from browning, put the avocado seeds in the dip. Cover with an airtight lid and keep refrigerated.
Crumbling and mashing the feta in helps making it creamy and marinate the flavor better.
Don’t skip the fresh herbs! Trust me.
I like to add white/yellow onions because its not as strong as red onions and adds a hint of sweetness.
Make this dip fresh, ideally right before you serve!
