Apple Halwa Cake
Fall is here and everyone needs apple recipes. This is an eggless Indian fusion dessert, Apple halwa Cake. A soft moist apple cake flavored with spices and made using ghee, (clarified butter) which makes it so aromatic. Topped with a spiced apple glaze this cake is a must-try! This cake will feel like a hug with every bite. It is so easy to make, a one-bowl recipe! The ghee and spices make the cake so aromatic and make you feel like you are having halwa just as a cake. This cake was loved by kids and adults so that is a win! You will win hearts by making this treat which is perfect with coffee or as a tea time cake.

Ingredients:
Cake:
1 3/4 cups/455g ground apples, I used red delicious apples.
1/2 cup Walnuts chopped in pieces
2 cups/300g All purpose flour, sifted
1 cup/220g Sugar
1 tbsp Cinnamon powder
1/2 tbsp Nutmeg powder
1 tbsp Cardamom powder
1/4 tsp Salt
1.5 tsp Baking soda
1/2 cup/125g Milk of your choice
1 tbsp Vanilla essence
1/4 cup Condensed milk
1/2 cup Ghee- clarified butter
Glaze:
3/4 cup Powdered sugar
2-2.5 tbsp Apple juice
2 tsp Cardamom powder
Directions:
Wash and peel apples. Cut into pieces and grind in a food processor. When grinding some small pieces are okay.
Preheat oven to 350F. Grease a bundt cake pan/cake tin of your choice.
In a large bowl add flour, sugar, cinnamon powder, nutmeg powder, cardamom powder, salt, baking soda and walnut pieces. Whisk it together.
Add ghee, milk, vanilla and condensed milk and whisk it together. It won’t be smooth mixture yet.
Add the ground apples and use a spatula to mix together. The batter will be runny now.
Pour the batter in the prepared pan and bake at 350F for 50-60 mins till baked through.
Let it cool for 10-15 mins and then unmold.
Glaze: Mix together the spices, powdered sugar and apple juice till smooth.
Pour the glaze over the cake and serve!
It is delicious warm or cold. Pairs great with ice cream.
Notes/Tips:
You can use gala or red apples. Anything that is juicy works.
Ghee is essential in this recipe. I would not recommend skipping it.
You can skip the walnuts if you want.
It tastes the best warm paired with ice cream.
The glaze adds a lot of flavor so make sure you make it.
The batter comes together when you add the ground apple don’t worry.
I like to grind my apples and not use store bought ground apples since the pieces in it add texture and flavor.
