One pot Mexican Rice

Ingredients:
1 cup basmati Rice
2 cups of water
1 tbsp sesame oil
2-3 cloves of garlic
1.5-inch ginger
1/2 medium Roma tomato
1.5 tsp Salt as per taste
1/4 tsp Pepper
1 tsp onion powder
1/4 tsp nutmeg powder
1/2 tsp cumin powder
1 bouillon cube
1/4 cup chopped cilantro
Directions:
Wash rice well 3-4 times and drain it.
In a food processor blend garlic, ginger, and tomato with 1/2 cup water.
Put a pan on medium heat and add sesame oil.
Add the rice when the oil is warm, and saute it until it’s lightly golden. It takes about 5-8 mins and you must cook it well so it doesn’t burn.
Once golden, mix the pureed mix, water, spices, and bouillon cube. Bring the heat to low-medium heat and stir well.
Once it comes to a low simmer cover the pot and cook for 10-15 mins till it’s cooked. Stir in intervals so it doesn’t stick.
Once the cook is cooked, take it off the heat and let it sit covered for 3-5 mins.
Add chopped coriander and mix well.
The rice is ready!
Notes/Tips:
This rice is best had fresh so make it right before eating if you can.
This rice is great paired with something spicy or with fajitas or burritos.
You can add veggies to it if you want.
Don’t skip the bouillon cube, it adds a lot of flavors.
