Caramelised onion alla Vodka Dip
Caramelised onion Alla vodka dip is one for the books! Alla vodka sauce is ALWAYS a good idea and well so are dips so I had to bring the two together! I added caramelised onions to it, and oh my god, it just balances it perfectly. It’s cheesy, creamy, spicy and with the perfect flavors of alla vodka sauce. A delicious vegetarian dip to try this holiday season and especially for game days! Everyone will definitely be licking the bowl clean. You gotta try this easy dip recipe. Ingredients:
1 tbsp olive oil
1 tbsp butter
2 yellow onions in thin sliced
1/4 cup vodka
1/3 cup tomato paste
1/2 cup milk
1/2 cup cream
1-2 tsp Salt as per taste
1/2 tsp Pepper
1-2 tsp Chili
2 tsp Garlic powder
6 oz softened Cream cheese
2 oz sour cream
1-2 oz italian/ amul Cheese
Directions:
In a pan on low-medium heat add olive oil and butter. Once warm add onions and stir. Cook the onions for 10-15 mins stirring in between. The onions should be caramelised.
Once the onions are getting caramelised add the vodka and mix. Let it cook off and evaporate.
Add tomato paste and spices and cook. Cook it for 3-5 mins to remove the raw taste of the tomatoes.
Add half the milk and cream and stir it well. Once it’s combined add the remaining and cool. Let it boil and keep cooking till it thickens.
Let it cool slightly.
Preheat the oven to 380F.
In a bowl add cream cheese and whisk till smooth. Add sour cream and half of the all vodka mixture and mix together. Add more salt and chili if you need.
Layer it as the base in an oven safe pan. Top it with the remaining alla vodka sauce and shredded cheese.
Cover the dish with foil. Bake at 380F for 20-25 mins it’s bubbly. Take off the foil and broil it need be.
Serve with crackers, pasta chips, breads etc.
Notes/Tips:
Cooking the onions on low for a longer time gives the onions a delicious sweet flavor.
Make sure the vodka cooks off before adding the tomato paste.
When you add the alla vodka sauce to the cream cheese and sour cream be sure to taste it as you may need more salt and chili.
Top with fried onions if you like.
You can make the dip from before. Just add cheese and bake just before serving.
If you don’t want to use vodka you can just skip it entirely. Add 2 tbsp of veg broth instead.
